libmpc: update to 1.4.1 and drop only-src patch

1.4.1 ships as a .tar.xz (the .tar.gz is gone), so switch PKG_SOURCE to
.tar.xz; the @GNU mirror still serves it. Replace 001-only-src.patch
(SUBDIRS = src) with PKG_SUBDIRS:=src so tests/doc/tools stay unbuilt.
